  • cup butter softened — ½ cup plus 2 TBSP
  • ½ cup powdered sugar
  • 1 ¼ cups flour
  • ½ tsp lemon extract
  • 2 TBSP lemon zest
  • ½ cup chopped pecans

Instructions

  • In a mixing bowl, cream the butter and powdered sugar until light and smooth. Add the flour and lemon extract, mixing until the dough comes together and pulls away from the sides of the bowl. Fold in the lemon zest.
  • Cover and chill the dough in the refrigerator for 1–2 hours. About 10 minutes before baking, preheat the oven to 325°F.
  • Press the chilled dough into an ungreased 9-inch square baking pan. Score the surface into 16 squares and prick each square twice with a fork. Evenly sprinkle the chopped pecans over the dough and press them gently into the surface.
  • Bake for 20–25 minutes, or until the edges are lightly golden and the pecans are toasted.
  • Allow the bars to cool about 5 minutes, then cut along the scored lines. Let them cool completely in the pan on a wire rack before serving.
